The Best Banana Bread Recipe EVER!!!!

I thought I'd share one of my most favorite recipe's with you today.  This banana bread is the best.  Everyone eats it right up.  I baked two loaves on Thanksgiving Eve and they were all gone  by the end of Thanksgiving Day.   

I usually toss bananas that start turning in the freezer instead of tossing  them in the trash.   This makes it so I always have bananas to use for my bread.   

Sour Cream Banana Bread
1 stick (1/2 cup) butter or margarine (I use smart balance)
2 cup Sugar   
2 Eggs
4 Ripe Bananas (2 to 2 1/2 cups) mashed
3 cups sifted flour (often times I use 1/2 wheat flour)
2 teas. Baking Soda
2 teas. Baking Powder
1 teas. Salt (I use Sea Salt)
1 teas. Vanilla
1 1/2 chopped Nuts ( I use Walnuts)
3/4 cup Sour Cream ( I use lowfat sour cream but often use yogurt when I don't have the sour cream and that works fine)
3 Tbls. finely chooped nuts for the top of the bread (optional)

Cream butter and sugar; add slightly beaten eggs.  Thoroughly mash bananas and add to butter-sugar mixture.  Stir in Vanilla.  Mix and sift together flour, baking soda and powder and salt and stir into banana mixture.  Fold in sour cream (or yogurt) and 1 1/2 cups of nuts. Spoon into TWO greased and lighlty floured bread pans (you can line the bottom with waxed paper to make it easier to remove bread, you still need to grease the pans first).  Sprinkle finely chopped nuts over dough and bake at 325 degrees for 1 1/4 hours.  Cool. Remove to finish cooling on wire rack.

My Burlap Sign

I decided to make a burlap sign for myself after seeing many throughout blogland.  This was a simple and pretty fast project.  The hardest part was the arrangement of my letter and rosettes. Overall  I think it came out pretty cute, minus my handwriting....my letters always manage to angle upwards on one end.  The only thing I had to go out and buy was the chalkboard markers.  I got a set of 4 at AC Moore's for less than $5 bucks when using a 40% coupon. Everything else I had on hand!

Thanksgiving and Shopping

(Audrey passed this around before dinner, we all fun writing things were grateful for.) 

We had a very nice and simple Thanksgiving this year.   The kids and I watched the Macy Parade on T.V. It was exciting at times and other times we got up did are thing and it seemed that one set of eyes were always on the T.V. so if something good came on we'd yell for the others to come...I think we had a pretty good system!  I enjoy watching the Radio City Rockettes the most.  It amazes me how they can stay in sync perfectly, Ethan said they look like robots because they look so perfect. Lots of dedication from the dancers for sure. I think it amazes me because I have absolutely no skills when it comes to coordination.....I can't even do aerobics (I"m not kidding). 

After the parade my parents showed up to visit for a bit before we gathered over at my mother in laws house (next door) and enjoyed a large yummy fillig dinner with lots of yummy pies to choose from.  We are now home watching more football, playing, resting and relaxing. I'm thinking I should start my search for Christmas gifts (sigh). I am one that hates to buy something just to buy it.  I want to get a gift that is practical or will be enjoyed.  Searching through amazon.com and etsy.com is fun but so hard making a decision. My son is 9 and is growing out of the toy stage so I need to think hard.....oh, how this hurts my noodle!  I guess getting a head start is good., I'm usually a last minute person but I'm working on this. Anyway, I 'm off to search for stocking stuffers at etsy.com  They usually have some unique things. I hope you all had a Happy Thanksgiving and I do hope shopping is easier for you then I.

Being Thankful

Finding Joy | The ABC's of Thanks

I love Thanksgiving! I love that it has nothing to do with gifts or candy!  It's all about family and being thankful!  I'm thankful for so many things that I've decided to join Rachel's "ABC of Thanks" at finding joy

a) AUDREY - thankful for our little miss muffet who keeps me going with her attitude.......sometimes sweet as pie and other times full of sass!

b) BOOKS - thankful for the books that pile up because my kids love to read.  i don't read my own books everyday but I do love books.  i have been big on building a library for our kids and have read to them from the beginning.  it has paid off...they love to read. 

c) COFFEE - thankful for hot coffee. there is nothing like a cup of coffee mid day when i'm feeling like i need a little pick me up.
d) DAD - thankful for an easy going, thoughtful, ethical, dad that raised me well.  he's not just a great dad but a great grandfather too. thanks dad!
e) ETHAN - thankful for our E-Man, my first born. what a great kid he can be, we were recently told by his 4th grade teacher that she wishes she could clone him. what a wonderful compliment to hear!   

f) FAMILY - thankful for my family that i can't get enough of.  who knew this would be the best part of my life!
g) GRANDPARENTS - thankful for my wonderful grandparents that have given me such wonderful memories that i will cherish forever and for my kids grandparents that are giving them wonderful memories to cherish. 
h) HUSBAND - thankful for eric who is a great guy who takes great pride in his health.....he has such determination to stay fit and eat right (wishing i was more like him).  he is an awesome basketball coach for my son's team and most of all a great father.  
i) IBUPROFEN - thankful for iburophen that helped me get through the pain of a very bad twisted ankle. 
j) JASON MRAZ - thankful for having seen him live this past september... what a great thrill!
k) KITTY CATS-  thankful for our  3 of kitty cats that have been part of our family for 12 and 13 years.
l) LAUNDRY - thankful for the laundry that never ends because it means we have clean clothes to wear everyday!
m) MOMS - thankful for moms.  my mom, my stepmom, my mother-n-law, all moms.  moms are what makes this world go around or at least keeps everyone in order!
n) NIECES and NEPHEWS - thankful for the fun these kids give us and eachother.
o) OCEAN - thankful for the ocean that brings so much joy!  the ocean is one of my favorite places ever!
p) PAPER - thankful for paper that allows us to do so much! 
q) QUILTS -  thankful for the warm beautiful quilts my mother-n-law has made for us and the kids to snuggle with.
r) REST - thankful that our bodies rest to give us energy to start over the next day.
s) SCRATCHES - thankful for the scratches on the door molding because we have dogs that can't wait to see us when we come home.

t) TERRY and TOM - thankful for my sister and brother who have filled the part perfectly!  
u) UGLY CEILING - thankful for my ugly ceiling because it means i have a roof over my head. 
v) VEST - thankful for my vest that i wear everyday that keeps me cozy when going from place to place.
w) WATER - thankful for the plentifulness of clean, fresh water we have.....to drink, to bath, to wash with and so on .
x) XEOPENEX - thankful for the xeopenex that has helped my son with his cold induced asthma.
y) YARN - thankful for yarn that creates such cute and warm things.

miscellany monday

1. jumping fun - oh, to be seven again!  having so much fun without any worries.  why can't life stay that way.

2. too funny - tonight hubby and i watch "grown ups"  i laughed so hard that tears ran down my face.  those group of guys are too funny.  it feels so good to have a laugh that hard!

3. envirosax -  one of my favorite things....... i love, love, love these bags.  they are so handy, they roll up so you can keep them in your purse.  i don't use them for groceries but for other shopping.  i also use them to carrying things from here to there.  they have so many cute styles to choose from too!

4.  diary of a wimpy kid - so my son has 
read the series "diary of a wimpy kid" (any of you who have young boys, you know the books). last year i took him to see the movie and after watching it i decided to read the books.   they are so worth reading...lots and lots of laughs which is always a good thing. 

 the other night while reading the lasted book i  laughed so hard my husband thought i was crying. i was reading this part of the book:

this is so my husband and son at the kitchen table......too funny (not at the time, of course).  any parent knows helping a child with math isn't easy these days.  if your child has these books....read them!!!  it makes me see how our kids view us as parents.  we are too funny!

I Did It! A Laundry Sign and A Wreath

An afternoon while the kids were at school, a cup of coffee and a glue gun and this is what I did:

I decided not to use burlap for the laundry definition as most I've seen have, I was just too afraid to put it in my printer.  I actually was squinting my eyes with fear as I put this cotton fabric through.  I was pleasantly surprised when all went well.  I first ironed the fabric to some iron on transfer paper so that it would go through easily.  The tutorial I saw recommended wax paper but that didn't work for me......I must have been doing something wrong because the fabric wouldn't stick.  After the hard part, the fun part started with making the rosettes with fabric and burlap then putting it all together. I had the frame from long ago and it was perfect for this project.  I'm pretty happy with the outcome.

After that, I made this....

  I copied Jen over at Tatertots and Jello.  Someday I will attempt to make one filled with rosettes.
 It's now hanging up making me happy when I walk by and see it.

Then when I was all done with my two projects it was time to clean up........I'm such a messy crafter and scrapbooker.  I make a big mess then clean it up. Do you clean as you go or wait until the end?

Wednesday Memes

{one} what time do you normally wake up?
does this included the first time i wake in the night to take a potty break?  ever since i've had kids there in no more sleeping through the night.  but if not, then between 6:30 and 7:00am during the week because the kids have school and weekends vary... but usually 8 or 9ish.   and, if i'm really sleepy my hubby gets up with the kids and lets me sleep until 10 on sunday's! 

{two} do you have a go-to song for karaoke?
karaoke is not my thing, i can't sing and to actually get up in front of people.....noway!  what's really funny is that i actually worked in a karaoke bar when i was 19/20 years old.  it didn't seem to matter to many that they couldn't carry a tune....i wish i could be like that.   

{three} if you could only see black and white except for one color, what color would you choose to see?
blue....soft blue...like the sky.

{four} what color best matches your personality?
blue, i think but sometimes red.

{five} if you could choose one meal to cook better than anyone else, what would it be?
some sort of pie.  i never even attempted to make one before.

{six} how many keys do you have on your key ring?
two. my car and house.  i've always wondered why some people have a ton of keys of their key chain....who wants to carry that around?

{seven} do you give your pets birthday/christmas gifts?
not really, sometimes at christmas they make get some treats under the tree if i remember to do it. we used to always have things for them but kids came along and took over.

{eight} when your plate has different foods on it, do you mix or not?
sometimes, it really isn't a big deal.  although i couldn't imagine mixing anything hot with cold. 

{nine} if you could hire someone to do one thing for you all the time, what would it be?
i would love, love, love to have a cook.  someone to prepare healthy meals.  cooking is so time consuming, i'd rather spend it elsewhere.   i do like to bake on occasion.

{ten} when flying, do you prefer the window or aisle seat?
window!!!!  i like to see the blue sky!

The Card

After a few days of picking out a card and pics for our christmas card, this is what we came up with!  I'm so glad the tough part is over and the fun part is to come.  I always enjoy hand addressing each and every envelope.  I try to work on a few or so every night until there done.  I should have them in the mail by the first of December.....yippe!  I love sending and receiving Christmas cards!  I love getting good mail period!

Update since this post was from November:  I received our cards in the mail a few days after ordering them but didn't manage to get them sent out until December 8th instead of the 1st like I'd hoped but for me that's still pretty good!  We have received some nice comments about them from our family.  I would definitely order from Shutterfly again!

miscellany monday

hello miscellany monday bloggers!

1.  fresh air  we had a beautiful weekend here in maine. the temperatures were in the 60's, so i actually got to open some windows on saturday afternoon, the sun was so warm and the skies were so blue.  i love when i can open the windows and let the fresh air in!  sometimes a window could be open with the heater going when i'm home alone.....my husband wouldn't be too happy to hear that but i need my fresh air!

2.  family pics  since it was another beautiful day on sunday we decided to attempt taking some family pics for our christmas cards.  never an easy task but overall things moved along quickly.  i set the timer and ran to a spot to join the rest of the family.  there were some interesting pics of my hands in places that shouldn't be but i did manage to get a few cute ones.  now i need help deciding which one to use.  please help me to decide.  they do need some cropping but i wanted to get these posted so i can mess with that later. my husband likes the third one and i like the second one.  this is why i need your help!

3.  oldies  audrey found the old record player under our bed and decided to listen to some old records.  i have a ton of my mothers old 45's and one of mine from when i was little that plays "i'm a little tea pot", "ha! ha! this away" and "green grass grew all around".....i love those songs and i love that audrey enjoyed the record player even more.  i really need to pull out my old type writter...i think both kids would have fun with that.

4.  baseball ethan can't get enough of his baseball cards......he either is looking through cards, tossing a baseball around, looking on ebay for gloves or outside with a bat.  for those of you who think your young boys have no interest in sports, just wait until age 8 comes around.   toys aren't so interesting anymore, which is fine with me!

6. ankle  i twisted  my ankle 12 weeks ago and it's still not normal.  i've gone to the doctors and have been wearing (or should i say...i've been given) a brace to wear. the brace is to prevent me from twisting it again while it's healing.  the twist was so bad that it caused a deep tissue injury (he told me the medical term but i can't remember what it was, except for the first letter was S). the only thing that will make it better now is time (more time needed as you get older).  i  am so careful not to re-injure it, it's sore often.  my foot doesn't bend like it used to so i no longer can fly down the stairs, i do one step at a time....boring!  anyway......i pray that nothing silly happens...like slipping on ice this winter or deciding to make a wrong decision to run a little .  time! time! time!

6.  thankful  and, one last thing........i'm thankful for so many things but today i'm especially thankful for nature.  it was so beautiful today and i enjoyed spotting this more than ever.......

Chalkboard Painting Projects

I decided to go for it and try painting a plate with chalkboard paint. Overall I think it came out pretty cute and the cost was very little.  I've had the plate for years (it was a handy down from my mother...thanks Mom!)  I've always loved it but hardly ever used it,now I can enjoy it daily!  I did spend around 5 bucks for the paint which I could do a ton of other projects with and I had the plate holder laying around for sometime now.  I painted two coats of paint on the plate.  I think spray paint would give it a smoother look but I was scared to go that route. Maybe for a bigger project.  Next I did my utensil holder (that I never really use for utensils)...

I think it's super cute now.   I look forward to trying some other projects.........but I need to work up my courage first.  If you have any tips, please share.

Shutterfly = Christmas Cards

It's that time of year again to start planning for Christmas Cards.  Never an easy task for me; getting the family picture taken, picking out the card..... thinking I should skip the photo and just send regular cards. Wouldn't that be easy and I could get them out early.  Right?!?!??!  Well, it's not that easy to give up the photo cards, especially when Shutterfly has such cute photo cards to choose from.  Here are a few of my favorites cards.  

 I guess I'd better get busy planning for an afternoon of snapping lots and lots of photos of our family!  Sometimes the kids cooperate and sometimes not so much.  Thinking I won't try so hard to get the "perfect picture".
