On Tuesday our Ms. Audrey had surgery to have ear tubes put in (2nd time) and her adenoids out.  She was such a trooper.....wasn't nervous at all!  The hardest part was when she woke and the very uncomfortable IV in her hand was bothering her.  They wouldn't take it out until they knew she was going to be ok.  She's an emotional waker (my made up word) after being under, The Doctor actually suggested giving her a sedative....my thoughts on him....JERK!  I don't think he has kids.   We choose to skip that and once the IV was out she was fine.  We had a quiet day at home and hope she can now enjoy the rest of her vacation.

German Pancakes

I thought I'd share my recipe for German Pancakes since a few of you asked about them from my last post. 

This is a recipe for a double batch which was perfect for our family of four (my husband is a big guy and can eat a lot).
6 eggs (beaten)
1 cup of sifted flour
1/2 tsp. sea salt
1/2 tsp. baking powder
1 cup of milk
3 tbsp. melted butter ( I used smart balance. I actually like it better than the butter in this recipe, the butter seems to sit at the top after baking where the Smart Balance doesn't and it's a better choice)
I also like to add a tsp of vanilla and cinnamon.

Keep beaten eggs in separate bowl and sift flour, sea salt and baking powder in a bowl.  Add eggs to dry ingredients.  Stir in milk and melted butter.  Pour into a large greased baking dish or 2 small ones, you can also use a cast iron frying pans. Mixture in dish should be a bout 1/4 inch thick.  Bake 20 minutes at 350 degrees.

German Pancakes will rise in the oven, but fall when taken out.  Sprinkle with powdered sugar and serve with fruit, maple syrup, honey or lemon.  Our family likes to eat them with real Maple Syrup. Oh, so yummy!

The best thing about them is they are super easy!  I like easy and fast.  I really like the fact that all you have to do is mix and bake.  I served these Christmas morning for the first time and they were a big hit.  I hope you all enjoy them as much as we do!

Friend Makin Monday

Happy Monday! I've joined Amber's Friend Makin Monday and you should too!  It's all about Easter!

On the Saturday morning before Easter we always CoLOr EgGs!  We colored 3 dozen!  The kids always have fun doing it. I'm hoping that it will be something they want to do every year no matter how old they get because it's become a tradition!  love the bright colors...makes me happy!

Our Easter morning started off at 5:45am....eeeks!  This is way too early for me, especially when I went to bed at 12:30am.  I managed to pull myself out of bed and watch the kids tear opened there baskets. They love goodies!  Since Audrey got the Alvin and the Chipmunks Squeakquel  and Ethan a Lego set (from us, the Easter Bunny only brings candy) I was able to lay back down for a little bit while they watched and built. 

  Soon it was time to go hunt for eggs!  The kids are in such a hurry to get those eggs I find it hard to keep up and take pictures, it's like where at a race......too funny.  After checking out the loot in the eggs I made German Pancakes.  

I had to go to work for a few hours but it was all good...the boys cleaned up the yard while Audrey chilled in the 75 degree weather. It was a beautiful day!
